I've just recently been introduced to Quinoa and found that I really like it, I’m not sure what took me so long to give it a try!.

I cut out pasta quite awhile ago and I'm always looking for something to replace the noodles in classic comfort food recipes.

I tried out this stew, and love it!

Quick and Easy, Creamy Chicken Quinoa Stew (Instant Pot)

Ingredients:

  • 1 tbsp Olive Oil

  • 1 medium onion diced

  • 4 celery stalks diced

  • 4 large carrots diced

  • About 1 lb Six S Dairy Chicken (this can be raw, pre-cooked, or leftover), diced

  • 1 1/2 cups quinoa uncooked

  • 1 tsp Redmond’s Real Salt

  • 1/2 tsp black pepper

  • 1 tbsp poultry seasoning

  • 8 cups Chicken Bone Broth

  • 4 oz Clabber Cheese (or cream cheese)

  • 1/4 cup Six S Dairy Raw Cream

Steps:

  • Add the olive oil to your Instant Pot, and turn on to saute - allow to heat.

  • Add the onion and saute until it begins to soften and brown.

  • Add the celery, carrots, chicken, and quinoa. Mix well.

  • Season with salt, pepper, and poultry seasoning.

  • Add broth Set on manual high pressure for 15 minutes.

  • Allow the pressure to release for 5-10 minutes, and then quick release.

  • Stir in the clabber cheese and cream

  • Enjoy!!
