Do you find yourself exhausted at the end of the day? You’ve been busy working and running kids here and there, then at the end of it all, there’s not enough time (or energy) left to get a good meal on the table.

I hear ya!

I’m on my feet from before sun up till after sundown, constantly on the go. Getting a healthy meal into my family at the end of the day can be a challenge. Challenging as it may be, I try to make it a priority.

There’s simply nothing like the rewarding feeling of sitting down and reconnecting at the end of a crazy day over a warm home-cooked meal.

I’m constantly on the lookout for quick, easy, healthy meals that don’t require a lot of prep or clean up time.

I have to say, I think grass-fed ground beef is one of the best, most versatile meats to be sure to keep on hand. It cooks up quickly, tastes awesome, and it’s healthy!

Did you know that grass-fed beef has lower total fat than conventional beef? It’s also higher in antioxidants like vitamin E and higher in heart-healthy Omega 3 fatty acids. Another bonus is it’s higher levels of CLA, which is a fat that’s thought to reduce cancer and heart disease risks. Pretty sweet right?!

We use ground beef quite a bit and I want to share with you our favorite 5 ground beef recipes. Most of them are super quick & easy and low mess. There are a couple that take just a little more time, but they’re super yummy!

Spaghetti, tacos, goulash, and chili are all quick and easy meals that we love. I cheat and use season packets for tacos and chili; sometimes it’s all about being able to save a little time and make things simple.

A few others that we love are Instant Pot Hamburger Stroganoff, Meatloaf, Sloppy Joe, Crock Pot Lasagna, and a fun twist on burgers, the “Jason Burger”. Check out the recipes below!

Instant Pot* Hamburger Stroganoff

This has become a new favorite for my kids!

Ingredients:

  • 1 lb Six S Dairy Ground Beef

  • 1/2 c Minced Onion

  • 1 Clove Minced Garlic

  • 1 t. Salt

  • 1/4 t. Black Pepper

  • 3 c Beef Bone Broth

  • 3 c Egg Noodles

  • 1 c Six S Dairy Raw Milk

  • 4 T. Flour

  • 1 c Sour Cream

Steps:

  • Place beef, onion, and garlic in Instant Pot on Saute. Cook until

  • beef is browned

  • Turn Instant Pot off

  • Add Salt, Pepper, Broth, and Noodles

  • Cook on manual high for 8 minutes

  • Quick Release

  • Whisk flour into milk 1 Tbsp at a time until well combined

  • Pour milk mixture into Instant Pot and stir well

  • Add sour cream and stir well again

  • Let thicken for a few minutes if desired while on keep warm setting

Meatloaf

I like to cook this in a cast iron grill pan, but I think any rimmed baking pan would work.

I'll often put it together earlier in the day, cover it and store in the fridge, then when it's time to start making dinner, just throw the pan in the oven.

Ingredients:

  • 1 lb Six S Dairy Ground Beef

  • 1 lb Six S Dairy Breakfast Sausage

  • 1 lb Six S Dairy Jowl Bacon

  • 1 Six S Dairy Free Range Egg

  • 3 Slices Whole Grain Bread

  • 1t. Onion Powder

  • Salt & Pepper

  • 1/4 c Ketchup

  • 3/4 c Six S Dairy Raw MIlk

Steps:

  • Pre heat oven to 350*

  • Crumble bread slices (I use a small food chopper)

  • In a large bowl place all ingredients except bacon

  • Mix well, I find it easiest to mix with clean hands

  • Shape mixture into a loaf and place in cast iron grill pan

  • Cover with strips of bacon

  • Cook for about 1 hour and 15 minutes or until internal temp is 160*

  • Turn the oven on broil towards the end of cooking to crisp bacon

Sloppy Joe

This is an easy recipe to make and it freezes well.

I will often make a double or triple batch and freeze the extra, then when I know I have a busy day coming I'll thaw some for a super quick dinner.

This also keeps well for several hours in a Crock Pot (or Instant Pot) on warm if you need to make it in advance for dinner later that day.

Ingredients:

  • 1 lb Six S Dairy Ground Beef

  • 1 T. Butter

  • 1/2 Yellow Onion

  • 1/2 Green Pepper

  • 1 Clove Garlic

  • 2 t. Yellow Mustard

  • 3/4 c Ketchup

  • 2 T. Brown Sugar

  • 1/2 t. Salt

  • 1/4 t. Black Pepper

  • 1 T. Worcestershire Sauce

Steps:

  • Place first 5 ingredients into a large saucepan and cook until beef is browned.

  • Stir in the remaining 6 ingredients and heat until warm.

  • Serve on hamburger buns.

Crock Pot Lasagna

Another one the kids love!

Ingredients:

  • 1 lb Six S Dairy Ground Beef

  • 1 Qt Spaghetti Sauce

  • 8 oz Lasagna noodles (uncooked)

  • 4 c Shredded Mozzarella Cheese

  • 1 1/2 c Ricotta Cheese

Steps:

  • Rub the inside of Crock Pot with olive oil

  • On the stove top, brown ground beef and mix in spaghetti sauce

  • Spread 1/4 of sauce on bottom of Crock Pot

  • Arrange 1/3 of noodles over sauce, breaking as needed

  • Combine cheeses, spoon 1/3 of cheese over noodles

  • Repeat layers

  • Cover, cook on low for 4 hours

  • Let stand in Crock with lid off for 10 minutes, top with extra mozzarella if desired

Jason Burgers

These burgers are affectionately named after my brother. He introduced us to this

style of burger a couple summers ago while we were hanging out at our family

cottage on the river.

Ingredients:

  • 1 lb Six S Dairy Ground Beef

  • 1 Six S Dairy Free Range Egg

  • 1/4 c Green Olives, sliced or chopped

  • 1/4 c Onions, diced

  • 1/2 c Shredded Cheese

  • 12 Ritz Crackers, crushed

  • 1/2 t Garlic Salt

  • Season Salt

Steps:

  • Place all ingredients except season salt into a medium sized mixing bowl

  • Using your hands, mix until well combined

  • Form into patties (usually about 6)

  • Sprinkle with season salt before cooking

  • Grill or Fry until cooked to your liking

  • Enjoy!
